Raspberry bavarian cream
Instructions
Mix the egg yolks, sugar and half the milk boiled with fish glue dissolved.
Allow to cool and mix with raspberry syrup.
Combine the whipped cream, remaining sugar and egg whites, stir and pour into 4 ramekins.
Keep for at least 12 hours in the freezer.
Serve with peach puree and garnish with fruit.

- 2 eggs
- 4 sheets of isinglass
- 120 cl of milk
- 120 cl of cream
- 200 cl of history of fishing
- 150 g of raspberry syrup
- 150 g of sugar
- Seasonal fruits
