Strawberry Bavarian cream (2)
Instructions
Let soften in cold water the isinglass.
Clean the strawberries, wash, drain and put them in a bowl; Sprinkle with sugar and sprinkle with a little glass of maraschino, then let soak for 30 minutes.
Clean, wash and sift the strawberries of the Woods, along with half of the drained strawberries from liquor, by dropping the past: in a bowl add the icing sugar, sieved, too, and the juice of an orange.
Then wring the isinglass, let it melt in a Bain-Marie and add the other ingredients.
Mix until mixture is blended to perfection.
Whip the cream and add to mixture with great delicacy.
Grease a pudding mold from the walls scannellate, pour in the mixture, leveled the surface with the back of a spoon and put in the refrigerator for 3 hours.
Turn then on a serving platter: to accomplish more easily immerse operation for a moment the mold into boiling water.
Decorate with remaining Strawberry Bavarian cream and serve.

- 6 sheets of isinglass
- 250 g of strawberries
- 360 g of strawberries of the woods
- 1 dram of maraschino
- 50 g of icing sugar
- 1 orange
- 50 cl of cream
- Butter
