Instructions
Place the flour on the work surface and place the diced butter, sugar, egg, egg yolk, grated lemon peel and 1 pinch of salt.
Start working the ingredients together making them mix well.
Cool yourself down every now and then your hands in cool water (not to erode the dough).
Do not work the dough too long, let it harden too.
As soon as the dough is homogenous, formed into a ball and wrap it in the film.
Put it to rest for half an hour in the refrigerator before you spread it and to prepare your tarts.
