Instructions

Very finely chop the almonds with 500 g sugar until you obtain a flour.

Prepare the fondant.

In a saucepan combine the sugar and water and bring to a boil.

Squeeze the four lemons, and make a killing in the juice.

Cook over medium heat without stirring, for 10 minutes, if there is the thermometer or until temperature of 115-120 degrees: one drop dropped into a glass of cold water must form a hard ball.

Remove the saucepan from heat and add the lemon juice.

Pour the fondant and the almond flour in kneading machine and work with the hook at medium speed, until you obtain a homogeneous paste.

Let cool.
