Vanilla Bavarian cream (5)
Instructions
Place the stick of vanilla in the milk, let boil, remove from heat and let it cool.
Put in water to soak the sheets of isinglass.
Mix the egg yolks with sugar until very foamy, then add the milk, put the mixture on the heat and continue to stir for 5 minutes, without boiling.
Remove from heat and let cool.
Place the sheets of isinglass in a pan with a drop of water dissolve them and add them to the cream, stirring well.
Pour the mixture into a bowl and put it in the fridge until it begins to stiffen, then add whipped cream, stirring gently.
Moisten a mold from the walls and rovesciatevi the scannellate compound.
Put in refrigerator for at least 3 hours.
Before serving dip the mold briefly in boiling water.
