Instructions
Let the mushrooms soaked in water.
In a bowl, soften the crumb of bread in milk and then with a wooden spoon stir up to reduce a homogeneous jelly.
Add the mushrooms properly wrung and chopped.
Linked the mixture with the egg yolks and then carefully fold the whipped egg whites.
Add salt and pepper.
With the flour and the eggs take the dough.
Pull a thin sheet, cut to ribbons and boil them in hot water.
In a buttered baking dish placed on the bottom of the noodles, pour over the mixture, jog, seasoned with Parmesan and butter ribbons.
Cook in the oven at 160 degrees for half an hour.
Accompanying wines: Friuli Grave Pinot Bianco DOC, Orvieto DOC, Gravina DOC.
