Perch with anchovies
Instructions
Wash, dry and lightly floured fillets.
In a pan heat two tablespoons of olive oil and Brown the fish on both sides.
Water, de-boned and chop the anchovies together with a clove of garlic and a tuft of parsley.
Add a little lemon juice filtered to colander, the Cayenne Pepper, a tablespoon of oil and half a glass of white wine.
Mix ingredients and pour over fish fillets.
Add salt and pepper, Cook for 15 minutes over low heat.
Accompanying wines: Cortese Dell'Alto Monferrato DOC, Bianchello DOC, Taburno Falanghina DOC.

- 3 anchovies
- 1/2 cup of dry white wine

- Cayenne pepper
