Eggplant pizza
Instructions
Peel the aubergines, cut into slices, season with salt and put them to lose water, then FRY them.
Get two discs from thawed dough, line a baking pan with buttered, including the edges.
Arrange a layer of Eggplant, a layer of Swiss cheese, bechamel and, eventually, another layer of Eggplant.
Close with the remaining disc of puff pastry, brush with beaten egg and bake in the oven at 180 degrees for 30 minutes.

- Puff pastry
- 3 eggplant
- 100 g of emmenthal cheese
- 1 egg
- Olive oil
- Salt
- 1 cup of bechamel sauce (see recipe)
