Instructions

Clean the Octopus, remove the bleb, eyes, the ' beak ', wash it in water, rinse and dry.

Put it, as a whole, in a crock pot, salt, pepatelo, add a clove of crushed garlic, thinly sliced onion, season with a little oil spilled.

Cook in saucepan, covered, for an hour.

When the water which the polyp produces in cooking was almost reabsorbed, add the tomatoes peeled, stripped of seeds and cut into pieces, sprinkle half a glass of white wine.

Finish the cooking, it takes about 2 hours, then cut it into small pieces.

Serve with your sauce should be of medium density, possibly add a little warm water.

Accompanying wines: Riviera Ligure Di Ponente Vermentino DOC, Verdicchio Dei Castelli Di Jesi DOC and Cilento DOC White.
