Tarragon chicken
Instructions
Clean the chicken; fiammeggiatelo, wash it and dry it.
Wipe it with the juice of half a lemon inside and outside.
Wash the tarragon, dry it gently and tritatelo.
Place in a bowl the butter softened at room temperature, tarragon and a pinch of salt and freshly ground pepper.
Stir the mixture with a wooden spoon by mix well.
Insert it inside the chicken, sew the opening with a white wire and place them on a baking sheet.
Sprinkle the chicken with salt and pepper, sprinkling it with oil and pass the Pan in preheated oven at 180 degrees for 40-45 minutes, often adding the broth, until the chicken is golden.
Remove from the oven, drain the chicken and place them on the serving dish.
Remove the fat from the broth, add 3 tablespoons of water, stir with a wooden spoon and remove the entire bottom.
Add the lightly beaten egg yolk separately along with the cream, heat the sauce for a few seconds, making it slightly thicken and pour into gravy boat.
Serve the chicken hot accompanied with the sauce.

- 1 1500 g chicken
- 1 sprig of tarragon
- 30 g of butter
- 1 egg yolk
- 50 G = = Cream
- 1/2 lemon
- 2 tablespoons of olive oil extra virgin
- Salt
