Meatloaf with Eggs (Polpettone Alle Uova)
Instructions
In a bowl mix the minced meats, bacon, raw eggs, breadcrumbs, cheese and a pinch of pepper and grated nutmeg.
Because the meatloaf is not too dry, use of breadcrumbs is not too dry or soaked in milk and wrung out.
Season with salt and add to the mixture some tablespoon of milk to make a dough consisting of but you can work with ease.
With your hands, shape the dough giving it the shape of salami, put at the center of the shelled eggs meatloaf and sausage recompose, pressing well with your hands for not having blank spaces.
In a saucepan heat the butter, add the chopped onion and thereupon the meatloaf, causing it to brown evenly.
Then passes the bowl in the oven already warm to 180 degrees and Bake 45 minutes.
Serve hot or cold meatloaf with green beans in a salad, fragrant with fresh mint or stir-fried with butter.

- 300 g of minced beef
- 200 g of minced pork loin
- 50 g of chopped bacon
- 2 eggs
- 2 tablespoons of breadcrumbs
- 20 g of grated parmesan cheese
- Milk
- 2 hardboiled eggs
- 30 g of butter
- 1 cipollina
- Nutmeg
- Salt
- Pepper
