Tomatoes cucumber mousse
Instructions
Wash tomatoes, cut them the top cover.

In the meantime wash the cucumbers, spuntateli at the ends and put them in the blender with ricotta and 2 tablespoons milk.
Combined with some mousse mint leaves and puree.
Whip the egg whites until foamy, blend the mixture gently and fill with the tomatoes.
Sprinkle with shredded chives.
Cover the tomatoes with their blanking plugs, put in refrigerator to harden for a few hours.
Remove a quarter of an hour before serving.

- 4 equal-sized tomatoes
- 200 g of ricotta
- 2 small cucumbers
- 2 egg whites
- Some leaves of mint
- Chives
- 2 tablespoons of milk
- Salt
