Leeks in jail
Instructions
Clean and Blanch leeks in lightly salted water.
Drain and cut in half (the pieces should be about 10 cm long).
Chop the onion and Brown in a pan with the oil and sausage bared and fragmented.
Add the tomato paste and cook for 20 minutes.
Pour the cream and scrape very abundant nutmeg doing thicken over medium heat for a few minutes and seasoning with salt and pepper.
Cool the mixture and mix with the egg yolk and grated cheese previously.
Divide the pastry into 8 rectangles, place on each a spoonful of salsa (thickened) which adagerà the leek.
Close the box by decorating the edges with the tines of a fork.
Brush with the beaten egg yolk, arrange the parcels on the oven previously drip pan greased with butter and bake at 180 degrees for about 25 minutes.

- Disc 1 of puff pastry
- 200 g of tomato paste
- 6 tablespoons of grated pecorino cheese
- 4 medium-sized leeks
- 150 g of fresh sausage
- 2 egg yolks
- 1/2 cup of cream
- Nutmeg
- 1 cipollina
- 1 walnut butter
- Olive oil
- Salt
- Pepper
