Stewed leeks
Instructions
Peel leeks: remove the outer leaves and keep only the white part.
Cut the leeks in half so you get around 16 shoes.
Heat the oil in a saucepan and let us slightly brown the leeks on all sides.
Add the Bay leaves and other herbs, the garlic peeled and cut into two and saffron.
Add salt, pepper and squirt with the broth and lemon juice.
Simmer leeks covered, over medium heat for 25 minutes, or until they are tender.
Then remove from heat and transfer to a serving dish.
You reduce the cooking liquid until slightly thick, then pour over leeks.
Serve warm or lukewarm.
