Stewed Leeks (Porri Stufati)
Instructions
Deprive the leeks of outer leaves and place them in an ovenproof dish, sprinkle with 1/2 cup of broth and wish for 10 minutes until they will be soft.
Drain them, align them in a roasting pan, brush with oil and sautee already warm oven to 200 degrees for 10 minutes, turning occasionally.
Emulsify the mustard, vinegar, salt and pepper.
Join the oil flush banging vigorously to get a creamy sauce.
Halve the leeks and sauce irrorarli.

- 8 medium leeks
- 3 teaspoons of mustard
- 4 tablespoons of olive oil
- Vegetable broth
- 1/2 tablespoon of white wine vinegar
- Salt
- Pepper
