Plums in Syrup (Prugne Sciroppate)
Instructions
Clean plums wiping thoroughly with a tea towel, punzecchiarle with a needle in five or six points, lay them in a bowl and pour boiling water over to cover completely.
Leave in water until it becomes warm, drain and keep aside a litre of this water.
Put the plums to dry in the Sun and as soon as they are dry, place them in pots.
Meanwhile prepare the syrup pour water of the plums in a saucepan, add the sugar and bring to a boil.
Pour hot syrup into jars filled to 3/4 (same plums will issue lots of water).
Squeeze into each jar with a few drops of lemon juice, seal the jars and Sterilise for 15-20 minutes.
Store in a cool place.
