Instructions
Boil the potatoes, Peel and pass through the potato masher.
Collect the proceeds in a saucepan, add the butter and stir.
Then begin to pour in the lukewarm milk.
After 20 minutes remove from heat, add the 3 egg yolks one at a time mixing rapidly, add the cheese, salted again if necessary.
Pour into a buttered baking dish and gratinate in the oven.

- 800 g of potatoes
- 80 g of butter
- 100 g of grated cheese
- 3 egg yolks
- 75 cl of milk
- Salt
