Endive mashed potato
Instructions
Clean the Endive, wash it thoroughly and lessatela in boiling salted water.
When cooked, drain well and chop finely.
In a pan melt half the butter and add the Endive.
Let flavour and, where appropriate, long with very little water.
When the Endive will be completely softened, almost chrome, add salt, pepper and, if necessary, correct the slightly bitter taste with a pinch of sugar.
Meanwhile prepare a béchamel sauce with the remaining butter, flour and milk.
When the sauce is ready retire from heat, pour in the puree on endive, mix well and serve on the serving dish.
