Mashed eggplant
Instructions
Wash, Peel the aubergines and pass them in a hot oven at 180 degrees for about 40 minutes.
Peel and mash the peeled tomatoes with Mashers.
Put the puree in a bowl and add chopped prepared with basil, mint, garlic and scallions.
Mix then add 1/2 cup of olive oil, stirring the mixture with a wooden spoon.
Add salt, pepper and serve cold.

- 3 eggplant
- 2 spring onions
- 1 clove of garlic
- 1 ripe tomato
- Mint
- Basil
- 1/2 cup of olive oil
