Instructions

Split the coconut, making sure to keep the liquid it contains.

Check out half of the pulp and remove the brown skin that covers.

Grattugiatela or shake it with 2-3 tablespoons of liquid.

Put the sugar in a saucepan and add a few drops of lemon juice.

Squirt with a cup of water and bring to a boil over medium heat.

Let boil for 2 or 3 minutes in order to obtain a syrup, then let cool.

Mix the egg yolks with the sugar syrup and join the coconut flesh reduced to cream.

Add a little melted butter and mix well.

Grease 8 small molds from Baba and fill with the mixture.

Turn on the oven to 180 degrees and cook in a Bain-Marie the cupcakes for 35 minutes.

Let them cool and check them out from the molds.

Serve warm or cold.

They are excellent accompanied with dark chocolate dissolved in a little water.
