Cheese beignets
Instructions
Place the ricotta in a bowl and knead dough with a fork.
Then add beaten eggs with a pinch of salt and ground pepper and transfer the mixture into a syringe for desserts.
Applied in each side and cut cream puff stuff them, one at a time, with the mixture of ricotta.
Place the cream puffs in a baking dish greased with a knob of butter and toss them in the oven (170 degrees) for 10 minutes.
Meanwhile you heat the cream in a small saucepan, gently heat.

, then the grated Parmesan cheese and cook for 2-3 minutes, stirring constantly, in order to thicken the sauce slightly.
After the indicated time remove the baking dish from the oven and sprinkle the cream puffs with the prepared sauce.
Let them stand for 5 minutes in the oven turned off, then serve.
Note: the Choux pastry with cheese are delicate and delicious fine dining, as well as very easy to prepare if you use ready-made pastry puffs, purchased in pastry; as for the cheese filling, you should pass the ricotta through a fine sieve before continuing with a fork so the cream is free of lumps.
