Thin dumplings
Instructions
Boil spinach, mince, mix them with ricotta softened, cream.
eggs, two tablespoons of grated cheese, adjust salt and pepper.
You have to get a very smooth dough.
Make the dough with 300 g of flour and three eggs.
Pull it to browse, put the filling in piles, cut the ravioli which must be slightly larger than usual.
Boil them in plenty of boiling salted water for about 10 minutes, drain them.
Toss with crumbled ricotta, grated cheese and melted butter flavored with Sage.

- 2 eggs
- 2 tablespoons of grated cheese
