Instructions

Cut the race rather large pieces, wash them and dry them.

In a pan heat four tablespoons of olive oil and insaporitevi an onion, a clove of garlic and a sprig of parsley.

When the mixture has browned add peeled chopped tomatoes, capers, adjust salt and pepper.

Cook the sauce for 10 minutes stirring occasionally.

Place in the Bowl race and lapped, if necessary, with a few tablespoons of warm water.

Cook for about half an hour.

Accompanying wines: Cinque Terre DOC, Verdicchio Di Matelica DOC, Vermentino Di Sardegna DOC.
