Mustard race
Instructions
Choose a nice big clean race putting it under running water for about four hours, then dry, clean vuotatela, how do you usually with all the fish and cut it into four portions.
Immerse, to make it boil in a court-bouillon with water, onions, carrot slices, fragrant bouquet, salt, pepper and especially of good white wine vinegar.
When it is cooked, remove from pan fish pieces, drain, then remove each black skin that covers them.
Prepare hot dishes, and each put a wee bit strong mustard, over the pieces of cutlery (the side where the skin has been removed), sprinkle with just butter melted and distributed here and there of butter flakes.
You can serve this season, with a nice raw tomato salad and cold boiled potatoes sprinkled with fresh parsley.
