Raspberry soft
Instructions
Pass through a sieve the ricotta and then the icing sugar, letting them fall into a bowl using a wooden spoon mix them thoroughly until mixture is creamy and smooth.
Take four small round moulds and they spread the ricotta, levelling it well on the surface, then place them on a tray and place them in the refrigerator for a few hours.
Meanwhile clean the raspberries, washing in cold water and quickly stendendoli to dry on a towel then put them in 4 cups, decorate with a scant spoonful of liqueur sprinkle them with sugar keeping themselves cool.
When serving remove everything from refrigerator and put the soft round over the raspberries with on top a Berry.
Ingredients and dosing for 4 persons
- 300 g of raspberries
- 200 g of very fresh ricotta
- 50 g of granulated sugar
- 30 g of icing sugar
- Aromatic liqueur
