Rice with Vegetables (Riso con Verdure)
Instructions
Divide into 4 parts artichokes.
Peel the potatoes, cut them into pieces and boil for 5 minutes.
After 3 minutes add the artichokes.
Aside from Brown chopped onion in oil, add potatoes and artichokes, drained and chopped parsley.
Adjust the salt and cook over low heat for 10 minutes.
Combine the broth, increase the heat, bring to a boil and pour in the rice.
Lead to firing.
Serve powdered with pepper and Parmesan.

- 300 g of rice
- 300 g of potatoes
- 150 g of artichokes
- 1 onion
- 50 cl of vegetable broth
- 60 g of olive oil
- Grated parmesan cheese
- Parsley
- Salt
- Pepper
