Rice au gratin with olives
Instructions
Boil the peas and toss with a knob of butter and a little salt.
Cut the olives into slices.
Chop the onion and soffriggetela in a little butter, add the rice, make it wet with flavour, warm broth, put in the oven for 7 minutes.
Remove from oven, season with remaining butter.
In a buttered baking dish then a layer of rice, peas, shredded ham, cheese slices and some olives, cover with rice, level the surface, pour in the beaten egg yolk with a little milk, garnish with remaining olives and gratinate in the oven at 190 degrees.
