Slice the shallots and let it dry in 30 g of butter and 2 tablespoons of olive oil.
Combine the shrimp and peppers cut into squares and season.
Add the rice, let it cook for a few minutes, add salt, sprinkle with sparkling wine and let it evaporate.
Continue cooking by boiling broth.
2 minutes before the rice is cooked, add the cream and diced kiwifruit.
Pour into a serving dish and sprinkle with pepper.
