Prosciutto Rolls with Asparagus (Rotolini di Prosciutto con Asparagi)
Instructions
Boil the asparagus, place them on a plate and let them cool.
Finely chop the parsley, cucumber, capers and add the chopped butter and reduced cream, keep on stirring.
Sprinkle this cream prepared on each slice of ham, add four asparagus and roll it up.
Place these rolls on a serving platter, leaving a space in the middle where you put the grated carrots seasoned with olive oil and lemon.
Decorate each roll with mayonnaise and a few capers.

- 500 g of asparagus
- 8 slices cooked ham
- 1 pickled cucumber
- 1 tablespoon of capers
- 200 g of mayonnaise
- 50 g of butter
- 2 carrots
- 1 lemon
- Parsley
- Olive oil
- Salt
