Zucchini rolls with prawns
Instructions
For Zucchini: wash and trim Zucchini.
Wash them well and cut them into very thin lengthwise.
Bring to a boil a pot of water and add salt.
Lessarvi sliced Zucchini for 1 minute.
Then, drain the zucchini and leave to cool.
Clean and shell the prawns.
In a skillet, heat the olive oil: when it is hot, place the prawns in a pan and sauté well.
Season with salt and pepper.
When the prawns are well cooked, arrange them on a tray.
Wash the cherry tomatoes and cut in half.
Wash and browse the sprigs lemon thyme: serve only the leaflets.
Clean the leek, cut into thin slices and roast in the pan used prior to the Gambas.
Add the cherry tomatoes and lemon thyme leaves.
Season with salt and pepper.
Arrange the zucchini slices on a work surface, place a prawn (big) and wrap it around the crustacean.
To serve: arrange on individual plates with a spoonful of leeks and cherry tomatoes.
Add some flower caper as a garnish and then the zucchini rolls with prawns.
Add salt, pepper, drizzle with a little oil olive oil and bring to the table.

- 200 g of zucchini
- 400 g of king prawns
- 4 sprigs of lemon thyme
- 250 g of cherry tomatoes
- 150 g of leeks
- 30 g of caper flowers
- 4 tablespoons of olive oil
