Instructions

Prepare the pastry with the flour, butter, sugar, 4 egg yolks, and lemon peel.

Let it rest for half an hour in the refrigerator and then roll out the dough on the work surface.

Bring it to a thickness of half a centimetre and cut a rectangle.

You'll have meanwhile prepared the filling with the sponge cake crushed and mixed with cherry jam; put it in the center of the rectangle and fold the dough over itself so that the ligature understood under the cooking side.

Brush with remaining egg yolk on the surface of the rectangle, cut it into cookies, place on a greased plate and put in the oven at medium temperature for about half an hour.
