Instructions
Pound in a mortar the garlic cloves are peeled.
Put the crushed garlic into a bowl, add the egg yolk, salt, pepper and stir with a whisk.
Pour the oil drop by drop, stirring continuously.
As soon as the sauce starts to thicken, pour the oil and if it is too dense alternating with a few drops of lemon.
When all the oil has been absorbed add the remaining lemon juice.
This sauce is ideal to accompany cold meats, salad and boiled vegetables.

- 1 egg yolk
- 2 cloves of garlic
- 20 cl of olive oil extra virgin
- 1 tablespoon of lemon juice
- Salt
- White pepper in grains
