Albufera sauce
Instructions
Pour the Supreme sauce in an earthenware dish and let it warm up to very high flame; When it is hot add the veal and Brown, stirring with a wooden spoon, mix well.
Bring the sauce almost to a boil, then add butter and cayenne pepper.
Let the butter melt completely, then turn off the heat and keep on working for a long time to sauce with the wooden spatula.
Keep the sauce warm in a double boiler, without let it cook further.
It should be served hot.
Ingredients and dosing for 4 persons
- 200 cl of supreme sauce (see recipe)
- 150 g of brown calf fund
- 50 g of diced butter
- 1 pinch of cayenne pepper
