Put in a saucepan the wine with fine chopped onion and cook lively flame until it reduces by one-third.
Remove from heat, let cool and stir in wine, with a whip, whipped egg yolk and mustard and add the olive oil, salt and pepper.
This sauce is suitable for vegetable stew and the spring rolls.
