Mix berbere sauce
Instructions
In Amharic, the official language of Ethiopia, mix berbere means pure chili powder, but it is a term also used to refer to this very spicy sauce used to accompany meat or vegetable dishes.
Mix garlic, onion, vinegar and water in a blender until you get a soft dough.
Put aside.
Place the remaining ingredients in a heavy-bottomed skillet and toast over medium heat stirring continuously; then let them cool for a bit.
At this point, transferred the mixture of garlic and onion into the pan with the spices and stir well.
Then put it back on the stove and cook over low heat for 10 minutes until a certain consistency.
Let cool, then pour the sauce into a jar.
If kept in the refrigerator, tightly closed, can be kept for about one month.
Ingredients and dosing for 4 persons
- 1 clove of chopped garlic
- 1 scallion (white part 1 or chives)
- 12 cl of water
- 50 G = = Paprika
- 2 tablespoons of chili powder
- 2 tablespoons of salt
- 1/2 teaspoon of ground black pepper
- 1/4 teaspoon of grated fresh ginger
- 1 cardamom pods (seeds)
- 1/4 teaspoon of coriander
- 1/4 teaspoon of fenugreek (seeds)
- 1/4 teaspoon of nutmeg
- 2 cloves of chopped garlic
- 1 pinch of cinnamon
