Bolognese sauce
Instructions
In a Pan fry the chopped Ham with oil; just has add a chopped onion, a bit of garlic, a bit of carrot and celery.
Stir and add the coarsely ground beef and mushrooms soaked, drained and chopped and stir again.
Pour the wine and add chopped parsley and marjoram, seasoned with salt, pepper and 1 pinch of nutmeg.
When the wine is completely evaporated, add the flour off the heat, mix well, take a few seconds and add the finely chopped tomato pulp.
You restrict the sauce on a low flame by adding every now and then a spoonful of water.
Ideal for dry pasta, especially with eggs.
Ingredients and dosing for 4 persons
- 50 g of ham
- 1/4 onion
- Garlic
- 1 carrot
- 1 stalk of celery
- 2 tablespoons of olive oil extra virgin
- 250 g of silverside of beef
- 15 g of dried mushrooms
- 10 cl of red wine
- 200 g of tomato pulp
- 1/2 tablespoon of flour
- Parsley
- Marjoram
- 1 pinch of grated nutmeg
- Salt
- Black pepper
