Colbert sauce
Instructions
Mix in a pan of meat extract broth and Marsala.
Incorporate the butter at room temperature, a bit at a time, and using a small whisk.
Finish with lemon juice, a pinch of chopped tarragon and parsley and a pinch of cayenne pepper.
Stir carefully.
Ideal for grilled red and white meat or fish.
Ingredients and dosing for 4 persons
- 125 g of butter
- 1 tablespoon of meat extract
- 1 tablespoon of broth
- 1/2 lemon (juice)
- 1 tablespoon of dry marsala wine
- Grated nutmeg
- 1 pinch of chopped parsley
- Chopped tarragon
- 1 pinch of cayenne pepper
