Cumberland sauce
Instructions
Remove the peel from 1/2 lemon and 1/2 Orange and cut into strips; squeeze the two fruits.
Mix the juices with the jelly and port and seasoned with mustard, ginger and cayenne pepper.
Add the shallots and zest and stir carefully.
Ideal for game.
Ingredients and dosing for 4 persons
- 300 g of currant jelly
- 2 shallots, chopped
- 1/2 orange
- 1/2 lemon
- 20 cl of dry port wine
- 1 pinch of english mustard powder
- 1 pinch of ginger powder
- Cayenne pepper
