Delicate for carpaccio sauce
Instructions
Shell eggs by separating the yolks from the whites.
Put first in a bowl, blend the egg whites and keep them aside.
Mashing the yolks up to reduce them in cream, combine the mustard, garlic juice, chervil and chives finely chopped.
Add salt, pepper, dilute with oil, then stir in the egg whites and the cucumber cut into cubes.

- 3 hardboiled eggs
- 1 small cucumber
- 2 cloves of garlic
- Chervil
- Chives
- Basil
- 1 teaspoon of sweet mustard
- Olive oil
- Salt
- Pepper
