Leek Sauce (Salsa di Porri)
Instructions
Clean the leek, wash them and cut them into thin slices.
To heat the oil in a pan and add the leeks.
Wet with wine, evaporate and add salt and pepper.
Cover and cook for 30 minutes, occasionally adding broth and stirring.
After baking let cool, then add the cream and blend.
Put the sauce back on the fire and heat it up before using it.
With this sauce you can season pasta, rice, gnocchi with spinach, steamed fish.
Ingredients and dosing for 4 persons
- 6 small and tender leeks
- 2 cups of olive oil
- 1/2 cup of white wine
- 6 tablespoons of cream
- Salt
- White pepper
- Vegetable broth
