Moschettiera sauce
Instructions
Put the shallots in a saucepan with the wine; Cook until completely reduced; Let cool.
Put the mayonnaise in a bowl, add the shallot, scallion and meat, a bit of cayenne pepper.
Mix well.
Ideal for white and red meats.
Ingredients and dosing for 4 persons
- 50 cl of mayonnaise
- 40 g of chopped scallions
- 10 cl of dry white wine
- 1 tablespoon of meat extract
- 1/2 tablespoon of fresh chopped chives
- 1 toe of cayenne pepper
