Ravigote sauce
Instructions
Chop the herbs, then crush in a mortar.
Add the anchovy desalted and fillets diliscati and capers desalted and crush them.
Combine salt, pepper and egg yolk, then, flush, oil.
Complete with a few drops of vinegar.
Ingredients and dosing for 4 persons
- Parsley
- Chervil
- Chives
- Watercress
- Thyme
- Tarragon
- 2 anchovy fillets
- 1 teaspoon of capers
- Salt
- Pepper
- 1 egg
- 4 tablespoons of olive oil
- Few drops of wine vinegar
