Instructions
Put in a saucepan over moderate heat wine, ham, peeled and sliced lemon, Sage, Rosemary, juniper berries, crushed garlic, salt, pepper, oil and vinegar.
Clean and chop the livers and merge the rest.
Stir and let the liquid reduce to 25 cl, serve hot.
Accompany the venison roast.

- 50 g of diced ham
- 25 cl of red wine
- 25 cl of white wine
- 1/2 lemon
- 3 leaves sage
- 3 cloves of garlic
- Rosemary
- 1 glass of red wine vinegar
- 1/2 cup of olive oil
- 2 chicken livers
- 7 juniper berries
- Salt
- Black pepper
