Fry the fillets in 30 g butter, adjusting the cooking time according to your own taste.
Should from the Pan and keep them warm.
Melt the remaining butter in the same skillet and fry the eggs.
Season with salt, pepper and cut the excess egg white so that they are perfectly round.
Place an egg on each fillet, garnish with a sprig of parsley and serve immediately.
