Bowls of chinese crabs
Instructions
Clean the crabs, then finely chop scallion and a Sauté in butter, add a tablespoon of flour and diluted with milk.
Boil stirring constantly for 10 minutes then add the cognac, cream and a tablespoon of tomato paste.
Add salt and pepper.
Add the crab meat cut into pieces and then turn off the heat.
Place everything in small white porcelain bowls and garnish with basil leaves.
Refrigerate for a few minutes only.

- 450 g of canned crab meat
- For the sauce:
- 1 cipollina
- 30 g of butter
- 1 tablespoon of flour
- 2 cups of flour
- 1 dram of cognac
- 2 tablespoons of cream
- 1 tablespoon of tomato paste
- Salt
- Pepper
