With a sharp knife cut each steak horizontally without detach it from the bone.
Insert cutting a slice of fontina.
Beat the steaks, add salt, pepper, dip in flour, then in beaten egg, then in bread crumbs.
FRY moderate focus in plenty of butter until you have a nice golden colour.
