Stuffed celery
Instructions
Wash the celery sticks and remove the wires.
Cut them into two to get the boats of 7-8 cm in length.
Stir with a whisk, cream cheese and lemon juice.
Add the cayenne pepper and mix thoroughly.
Spread the mixture on celery boats filling them thoroughly.
Cover with lumpfish eggs.
There is no need to salt the mixture: lumpfish eggs are salted enough.
Serve these boats in a cold buffet or at aperitif time.

- 4 ribs of celery
- 100 g of ricotta (or soft cheese)
- 2 tablespoons of cream
- 1 tablespoon of lemon juice
- 1 jar of lumpfish eggs
- 1 pinch of cayenne pepper
