Instructions
Cut the puff pastry into lozenges of 10 cm in length.
Arrange on a plate, brush with beaten egg yolk with a little milk.
Cook during 15 minutes.
The lozenges of dough ready, divide them in the thickness direction and leave in the oven to warm them.
Meanwhile, clean the leeks and cut them into pieces 1 cm long.
In a skillet, sauté them in butter, over medium heat, during 5 minutes.
Add the tomato paste and the white wine, salt and pepper and cook another 5 minutes.
Add the cream and pastis.
Put on low heat for 5 minutes.
For each and every diner, on a plate, put the bottom of a lozenge, discover it with a sauce of leeks, sprinkle with grated cheese and place on top of the other piece of the lozenge.
You eat hot!

- Puff pastry
- 1 egg yolk
- 3 tablespoons of butter
- 3 leeks
- 1/4 cup of tomato paste
- 2 tablespoons of white wine
- 1 cup of cream
- Salt
- Pepper
- 1 teaspoon of pastis
- Seasoned pecorino cheese
