Boil the potatoes and pass them to the vegetable mill.
Add salt, butter, parmesan, the egg yolks and the clear mounted to snow.
Make pudding mould and grease it with butter, brace it with slices of ham, pour in the mixture and place in hot oven for 20 minutes.
