Instructions
Clean and wash the spinach and boil them with the only remaining water on the leaves.
Drain, chop and season, strizzateli in a pan with a knob of butter.
Prepare the béchamel sauce and then add the spinach, seasoned sausage and fontina cheese in small pieces.
Adjust salt and pepper.
Stir the mixture one egg yolk at a time, and then the egg whites firm.
Grease a mould with the hole in the Middle, slightly spolverizzatelo of breadcrumbs, pour the mixture and bake in a water bath in a preheated oven at 180 degrees 45-50 minutes.
Withdrawn the mold, let it sit a few minutes, put on a serving dish and serve.
In the Middle you can put mushrooms sautéed or small meatballs.
